This is a quick and easy microwave corn dish, with some spicy heat added for variation. You can even leave the chilli seeds in if you like it hot!


Serves: 4 

  • 6 ears fresh corn, kernels cut from cob
  • 2 red chillies, seeded and diced
  • 1/3 cup diced onion
  • 2 tablespoons chopped red capsicum
  • 2 tablespoons butter, cut into pieces
  • 1 pinch salt and ground black pepper to taste

  1. Combine corn, chillies, onion, capsicum, and butter in microwave safe bowl. Cover, and cook in the microwave on 100% power until heated through, about 4 minutes depending on your microwave. Stir every minute. Serve hot.
