Chocolate Peppermint and Walnut Meringue Biscuits

Delicious flavours of chocolate, peppermint and walnut in a meringue biscuit. green food colouring is optional. Great for a special morning tea.

Serves: 24 

  • 2 egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon vanilla essence
  • 1 pinch salt
  • 3/4 cup (180g) white sugar
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup (120g) chopped walnuts
  • 1/2 teaspoon peppermint essence
  • 4 drops green food colouring

Preparation:10min  ›  Cook:8hours  ›  Ready in:8hours10min 

  1. Preheat oven to 180 degrees C.
  2. Beat egg whites until glossy. Add cream of tartar, vanilla, salt, peppermint essence and few drops of food colouring. Add sugar and beat until stiff. Fold in chocolate chips and nuts.
  3. Line baking trays with foil. Grease with oil. Drop by teaspoonfuls onto foil. Put baking trays in oven and TURN OFF OVEN. Leave in oven overnight.
