    This pumpkin dish makes a great side dish or vegetarian main.The pumpkin flavour is accented with thyme and blue cheese.

    Serves: 6 

    • 2kg butternut pumpkin - peeled, seeded, and cubed
    • 1/2 onion, minced
    • 1/4 cup (60ml) extra-virgin olive oil
    • 1/2 cup bread crumbs
    • 1 tablespoon minced fresh thyme
    • 180g crumbled blue cheese
    • 1 pinch sea salt and ground black pepper to taste
    • 1/4 cup breadcrumbs

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat an oven to 220 degrees C.
    2. Toss the pumpkin, onion, olive oil, 1/2 cup breadcrumbs, thyme, and blue cheese in a large mixing bowl. Season with salt and pepper. Pour the mixture into a large baking dish. Sprinkle 1/4 cup breadcrumbs over the pumpkin.
    3. Bake in the preheated oven until lightly browned on top, 35 to 40 minutes.

    Ok, I changed from blue to feta cheese (I don't like blue cheese) and did not measure anything, which I love about it.     This was AMAZING! The only change I made was that I used crushed corn flakes & Italian seasoning instead of seasoned bread crumbs and did not add salt & pepper.
