    A mildly spicy soup with light flavourings of pepper, lime and chilli-garlic. Very versatile recipe. Recommended served over or with rice.

    Ingredients
    Serves: 4 

    • 1 tablespoon olive oil
    • 1 clove garlic, minced
    • 1/2 onion, diced
    • 1/2 kg beef sirloin, cubed
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1 1/4 cups (310ml) chicken stock
    • 2 1/2 cups (625ml) water
    • 2 tablespoons lime juice
    • 1 jalapeno, diced
    • 1 head bok choy, diced
    • 2 tablespoons chilli-garlic sauce, or to taste

    1. Heat the olive oil in a large saucepan over medium heat. Stir in the garlic and onion then cook and stir until the onion has softened and turned translucent; about 5 minutes.
    2. Stir in the beef and continue cooking until the beef is evenly browned. Season with salt and pepper. Add the chicken stock, water, lime juice and jalapeno. Increase heat to medium-high and bring to a boil.
    3. Stir in bok choy and simmer until tender; about 5 minutes. Mix in chilli-garlic sauce. Serve.

    This came out great! Super easy too. This recipe satisfied my pho craving even though it's not your traditional beef noodle soup. I added soba noodles and upped the chicken broth because I like noodly/brothy soups. The lime is key (pardon the pun) - in addition to what the recipe called for, I served wedges with the soup so everyone could add more if they wanted. I did not include the chili-garlic sauce or the jalapeno to the pot since it would be too spicy for my 3 year old but adding it to my bowl separately after serving was still yummy!     Super good broth, we didnt have chili/garlic sauce but let everyone personalize at the end with the typical rooster chili sauce. Served over Soba noodles and it was a great hit.  -  23 Nov 2010  (Review from Allrecipes USA and Canada)
