    A mildly spicy soup with light flavourings of pepper, lime and chilli-garlic. Very versatile recipe. Recommended served over or with rice.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 clove garlic, minced
    • 1/2 onion, diced
    • 1/2 kg beef sirloin, cubed
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1 1/4 cups (310ml) chicken stock
    • 2 1/2 cups (625ml) water
    • 2 tablespoons lime juice
    • 1 jalapeno, diced
    • 1 head bok choy, diced
    • 2 tablespoons chilli-garlic sauce, or to taste

    1. Heat the olive oil in a large saucepan over medium heat. Stir in the garlic and onion then cook and stir until the onion has softened and turned translucent; about 5 minutes.
    2. Stir in the beef and continue cooking until the beef is evenly browned. Season with salt and pepper. Add the chicken stock, water, lime juice and jalapeno. Increase heat to medium-high and bring to a boil.
    3. Stir in bok choy and simmer until tender; about 5 minutes. Mix in chilli-garlic sauce. Serve.
