BBQ Spring Onion Potatoes

    A great summer side dish to throw on the BBQ. These potatoes are baked on the BBQ with butter and spring onions.

    Serves: 6 

    • 6 large potatoes, peeled
    • 4 spring onions, finely chopped
    • 2 tablespoons butter
    • salt and ground black pepper to taste

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat the BBQ for high heat.
    2. Microwave potatoes on High 5 to 8 minutes, until tender but still firm. Cool slightly, and cube.
    3. Place cubed potatoes on a large piece of foil. Top with spring onions. Dot with butter, and season with salt and pepper. Tightly seal foil around the potatoes.
    4. Cook on the BBQ 20 to 30 minutes, until tender.

    Simple and delicious - a great side dish for grilled steak. I cut the recipe in half and sprayed the inside of the foil with a bit of Pam so nothing would stick.     Pretty darn good and very easy to make. They can stick to the foil so extra oil or butter is required. Also, I like them with regular onion and bacon bits.
