A different kind of fruit bread using dried apricots, cinnamon, orange juice and honey. Made easier by making in the bread machine.
This bread exceeded by expectations by quite alot! It was delicious and rose beautifully. It had a great texture and was easy to cut - I'll never buy fruit bread again. Will vary my fruit and use as a base from now on. I made a few changes - used wholemeal atta flour and 6g bread improver, and subbed 1/2 cup of the flour with LSA mix. Also used apple instead of orange juice because that's what i had. I made it using a kitchenaid mixer, let it rise once, gave it another short knead and then let rise in the pan. Baked it on 200 degrees for about 1/2 hr. I would not bother again with the honey glaze as it was sticky and messy. Took it on a weekend away with friends and was loved by all. Thank you for this delicious recipe. I've made it twice & it's come out beautifully every time. I didn't put honey on the second loaf though as it makes the crust too sticky. I also used orange & mango juice as its all I had. This will definitely be a regular in our house now. I'm considering doing a version with dried pineapple & maybe coconut. Best fruit loaf recipe!
