A great lemon based marinade for Jewfish steaks before chucking them on the BBQ. One or two hours of marinating is all that is required, any longer and it negatively effects the texture of the fish.
Mix together lemon juice, olive oil, diced dill, salt and pepper in a shallow glass dish.
Add fish to the mixture and turn to coat both sides, then cover. Refrigerate 1 to 2 hours turning once or twice.
Preheat barbecue grill to a medium/hot heat.
Place fish in on the barbecue and grill for 10 to 12 minutes, turning once and brushing twice with reserved marinade until steaks are barely opaque in thickest part.
