Nell's Scones as Used by Sally
This is the best scone recipe I have ever used. A dear lady many years ago when I was newly married shared this recipe with me and I love it. She inspired me to keep on cooking and trying out recipes.
Ingredients
Makes: 12
- 2 cups (250g) self raising flour
- 1 heaped teaspoon baking powder (not bicarb soda)
- 1 egg
- 1 heaped tablespoon icing sugar
- 1 teaspoon salt
- 1/2 cup (125ml) runny cream
- 1 tablespoon natural yoghurt (I use Greek style)
- 3/4 cup (190ml) milk

- In a bowl sift together self raising flour and baking powder.
- In a separate bowl beat together remaining ingredients and then mix flour and liquid together well.
- Put mix onto a lightly floured kitchen bench and knead lightly (like bread). Add more flour if needed. I knead for about 1 minute.
- Pat mix to 1/2-3/4" (1- 1.5 cm) thick and cut out 12 large scones.
- Bake on a greased (or baking paper lined) oven tray in a hot oven until cooked and golden. Usually takes 10-15 minutes.

Altered ingredient amounts. You may need to add a little more flour is mixture is too "wet". This receipe is easily doubled and cooked scones freeze well. We always have some in freezer for when expected visitors call in for a cuppa - 06 Jun 2010
Altered ingredient amounts. Thanks anabela - you're right. I guess I just make them without thinking about how much more flour I add. If you aren't exact with liquid measurements especially you might need to adjust flour accordingly. They are a great receipe to double etc and also a hit when you have a large number of people to cater for. - 11 Jul 2010
