Marinated Mozzarella

    I get bocconcini balls in water from the supermarket and make this quick oil and herb marinade for them. It's easy and keeps well in the fridge. Tastes fantastic and makes a quick entree, snack or part of an antipasto platter.

    Serves: 6 

    • 250g bocconcini balls
    • 1/4 cup (60ml) extra virgin olive oil
    • 1 teaspoon fresh thyme, chopped
    • 1 teaspoon fresh oregano, chopped
    • 1/4 teaspoon chilli flakes
    • zest of 1 small lemon
    • 1/2 teaspoon sea salt

    1. Drain the bocconcini.
    2. Mix all the ingredients well in a jar and refrigerate overnight.
    3. Move them around from time to time so the oil covers all the pieces of cheese. Remove from the fridge 30 minutes before you serve it.
