Microwave Rice Pudding

    I'm not a big fan of the microwave but it is useful for some things plus it keeps the heat down in the kitchen. This is good for leftover rice but if you need to cook some just for this - start with about 1/2 cup of raw rice.

    Serves: 2 

    • 1 cup cooked rice
    • 1 egg, beaten
    • 1 cup (250ml) milk
    • 60g sugar
    • 60g sultanas (or raisins)
    • a pinch of cinnamon or nutmeg (or both)
    • a splash of vanilla

    Preparation:5min  ›  Cook:10min  ›  Extra time:10min resting  ›  Ready in:25min 

    1. In a suitably-sized microwave safe bowl, mix together the rice and egg and then add in everything else. Mix it all together well.
    2. Microwave on high for 2 minutes, then at half power for 8 minutes - stirring it every few minutes.
    3. Let it stand at least 5 minutes before serving.

    Needed a bit longer to cook in my microwave.  -  17 Sep 2011


    Not sure why the egg is needed in this recipe, first time around I cooked it as suggested and the egg scrambled, second time around left the egg out and it was ok, but rice was still very undercooked and i ended up adding another 2 cups of milk and finishing it off on the stove. Its also very sweet and the sugar could be halved.  -  04 Jun 2013


    This recipe doesn't work, I added a load more rice, sieved it as it still wouldn't work, then put it in the oven!  -  25 Oct 2015  (Review from Allrecipes UK & Ireland)
