Great as a quick easy salad served over finely sliced lettuce, or as a healthy filling for sandwiches. My grandchildren adore this with crackers as a "dip".

Serves: 6 

  • 1 can (425g) Tuna in brine (or springwater)
  • 3 Finely sliced spring onions
  • 3 sticks celery (diced finely)
  • 1 can (200g) corn kernels
  • 1/2 cup low fat coleslaw dressing
  • 2 tablespoons finely grated fresh parmesan cheese
  • pinch salt (as desired)
  • pinch pepper (as desired)
  • 2 tablespoons coriander leaves (finely chopped)

  1. Mix all ingredients in bowl and stir thoroughly
  2. Serve over finely shredded lettuce leaves, or in lettuce cups.


You can add other finely chopped vegetables such as snow peas, carrots or throw in a handful of sprouted seeds. an addition of finely chopped eggs adds a special touch.


Exchange coleslaw dressing for a dressings of your choice for a flavour change.

Other ideas

Wrap spoonfuls in lettuce leaves and secure with a toothpick and cocktail onion as an entree.
