Zhug - Middle Eastern Chilli Paste

    Variations of this sauce are made throughout the Middle East where it is popular on falafels and shawarmas. For a milder sauce, add some plain yoghurt before serving.

    Ingredients
    Makes: 200 ml

    • 2 teaspoons Herbie's Spices Whole Caraway Seed
    • 2 teaspoons Herbie's Spices Black Peppercorns
    • 1 teaspoon Herbie's Spices Whole Green Cardamom Seed
    • 1-2 green chillies, roughly chopped, more to taste
    • 1 large bunch coriander, leaves and stems, chopped
    • 2 garlic cloves, peeled
    • 1 lime, juiced
    • 1/2 teaspoon salt
    • 50ml olive oil

    1. Lightly grind caraway, peppercorns and cardamom in a pestle and mortar.
    2. Put all ingredients except oil in a food processor and blend, slowly adding oil to combine.
    3. Blend until pale and smooth.
