The lentils are precooked in this vegetarian dish from Southern India. You can use just one vegetable or a mix. A typical Sambar mix would be okra, carrot, pumpkin, potatoes and tomatoes. Serve with rice.
2 tablespoons mustard oil (or olive oil)
2 tablespoons Herbie's Spices Sambar Powder
2 cups vegetables, chopped into 1cm pieces
2 cups water
1/2 teaspoon salt
1 cup (185g) lentils or yellow split peas, soaked and cooked in 4 cups water until very soft
1 tablespoon chopped coriander leaves
