Vegetarian Sambar

    The lentils are precooked in this vegetarian dish from Southern India. You can use just one vegetable or a mix. A typical Sambar mix would be okra, carrot, pumpkin, potatoes and tomatoes. Serve with rice.

    Serves: 4 

    • 2 tablespoons mustard oil (or olive oil)
    • 2 tablespoons Herbie's Spices Sambar Powder
    • 2 cups vegetables, chopped into 1cm pieces
    • 2 cups water
    • 1/2 teaspoon salt
    • 1 cup (185g) lentils or yellow split peas, soaked and cooked in 4 cups water until very soft
    • 1 tablespoon chopped coriander leaves

    1. Heat the oil in a large saucepan and stir in the Sambar powder.
    2. After one minute, add the vegetables and stir-fry for a further two minutes.
    3. Pour in the water and salt, cover and simmer until vegetables are cooked.
    4. Add the cooked lentils or peas, and simmer another five minutes.
    5. Garnish with fresh chopped coriander leaves and serve hot over rice.
