Thick French toast for a nice quiet breakfast by yourself or increase the recipe for more. You can replace the cassia bark with cinnamon.

Serves: 1 

  • 1/2 cup (125ml) milk
  • 2 (70g) eggs
  • 1 level tablespoon sugar
  • 1 teaspoon Herbie's Spices ground cassia bark
  • 2 slices white bread, approx 2 cm thick
  • 1-2 teaspoons butter

Preparation:5min  ›  Cook:5min  ›  Extra time:15min soaking  ›  Ready in:25min 

  1. Beat the milk, eggs, sugar and cassia until well combined.
  2. Place the bread in a shallow dish big enough to lay both slices flat on the bottom.
  3. Pour the egg mixture over and let stand so that it soaks right into the bread.
  4. Melt the butter in a pan over medium-high heat.
  5. When it is sizzling, use a spatula to place the soaked slices in the pan. Cook 2-3 minutes each side.
  6. Serve plain or topped with cream, ice cream, maple syrup or mashed banana.
