Strawberries with Cinnamon Rosewater Glaze

Strawberries lightly braised in a cinnamon, sugar and rosewater syrup. Serve as a simple dessert with good quality vanilla ice cream or as a topping for pancakes.

Serves: 2 

  • 1 cup (250ml) water
  • 2 whole cinnamon quills, broken in half and lightly bruised
  • 100g caster sugar
  • 1 teaspoon rosewater
  • 250g strawberries, at room temperature washed and hulled

  1. Combine water, cinnamon, sugar and rosewater in a saucepan and bring to boil.
  2. Add strawberries, a few at a time, lifting out with a slotted spoon after about 5 seconds. Continue the process until strawberries have been braised and set aside in a bowl.
  3. Continue to simmer the syrup until it is reduced by more than half, and the syrup thickens to coat the back of a spoon.
  4. Remove from heat and pour through a strainer into a small jug and allow to cool.
  5. Serve the strawberries with a creamy vanilla ice-cream and the syrup spooned over them.

Use other fruit

This recipe can be used with different seasonal fruit such as peaches, raspberries and bananas.
