Bok Choy with Pine Nuts and Sesame Seeds

    Pine nuts and sesame seeds add a delicious nutty flavour to this quick bok choy stir fry. If you use normal size bok choy, slice then in half before you cook. You can cook any green leafy vegetables this way and omit the fish sauce if you want a vegetarian version.

    Serves: 4 

    • 1 teaspoon sesame oil
    • 1 red onion, very finely sliced
    • 2 cloves garlic, very finely sliced
    • 2 bunches baby bok choy, washed
    • 1 tablespoon light soy sauce
    • 2 teaspoons fish sauce
    • 1 tablespoon toasted pine nuts
    • 2 teaspoons toasted sesame seeds
    • 1 cup packed fresh Thai basil leaves (optional)

    Preparation:5min  ›  Cook:7min  ›  Ready in:12min 

    1. Heat the sesame oil in a wok or frying pan and add onion and garlic.
    2. Stir-fry over low heat for 5 minutes, then add the bok choy.
    3. Add the soy sauce, fish sauce, pine nuts, toasted sesame seeds and optional Thai basil.
    4. Swirl around the pan until the green tips of bok choy and the basil are just wilted.
    5. Serve hot with rice.
