    A simple way to eat fresh figs that feels a bit special - the figs are grilled with brown sugar and cardomom. Nice served with mascarpone. See the suggestion for frying them.

    Serves: 2 

    • 4 fresh figs
    • 4 level teaspoons soft brown sugar
    • 1 teaspoon Herbie's Spices ground green cardamom seed
    • mascarpone to serve

    1. Halve the figs.
    2. Mix the sugar and ground cardamom seed together in a small bowl, then sprinkle evenly over the cut side of each fig half.
    3. Grill the figs under moderate to high heat until the sugar has melted and the figs have warmed through and softened.

    Lightly Fried Figs

    Alternative cooking method: Melt sugar and cardamom in a pan then place figs cut side down in the pan and cook over medium heat until browned. Remove figs when cooked and add a little cream to the pan. Swirl to mix pan juices with cream, and pour over the plated figs.
