Warm Scallop Salad with Lemon Myrtle Dressing

    An easy and summery warm seafood dish which would be great on the barbie. Be careful not to overcook the scallops.

    Serves: 4 

    • 500g large sea scallop meat, cleaned
    • 1/2 teaspoon Herbie's Spices Lemon Myrtle Leaf Ground
    • 2 teaspoons extra virgin olive oil
    • Dressing
    • 2 tablespoons olive oil
    • juice of 1 lime
    • 1/2 teaspoon Herbie's Spices Lemon Myrtle Leaf Ground
    • 1 teaspoon honey

    1. To make the dressing, whisk together the oil, lime juice, lemon myrtle and honey - allow to stand for at least 30 minutes for flavours to develop.
    2. Dust the scallops lightly on both sides with lemon myrtle and set aside for 15 minutes.
    3. Heat the oil in a pan and cook the scallops over high heat for one minute on each side. Remove to a plate and cool.
    4. Arrange the cooled scallops on a platter, pour the dressing over, and garnish with thin slices of lemon and lime.
