Green Fish Curry

    A really easy basic fish curry - chop the fish into large chunks if you wish. You can build on this curry by adding other green vegetables like snow peas and broccoli towards the end of the cooking.

    Serves: 4 

    • 1 tablespoon sesame or peanut oil
    • 4 teaspoons Herbie's Spices Green Curry mix
    • 1 green capsicum, sliced into thin strips
    • 1/2 teaspoon fish sauce
    • 1 cup (250ml) coconut milk
    • 500g boneless fish fillets or steaks
    • fresh basil or coriander leaves

    1. Heat the oil in a wok. Add the spice mix and sliced capsicum strips.
    2. Add the fish sauce and coconut milk. Bring to the boil, stirring constantly.
    3. Reduce the heat and add fish.
    4. Simmer until the fish is cooked - 10-15 minutes, depending on the type of fish.
    5. Stir in the chopped fresh basil or coriander just before serving.

    Additional Tips

    Serve this over steamed white rice for a Thai-style green curry. If you don't want to use fish, substitute chicken for an equally good effect.
