Easy Spiced Shortbread

    An easy shortbread recipe for children and beginners. This shortbread is very more-ish, so be careful! The cinnamon and mixed spice give it an extra special taste.

    Makes: 16 biscuits

    • 200g butter or margarine
    • 1 cup sugar
    • 3 cups self-raising flour
    • 1 teaspoon Herbie's Spices Gorund Cinnamon Quills
    • 3 teaspoons Herbie's Spices Mixed Spice

    1. Melt the butter or margarine in a saucepan or in the microwave.
    2. Add sugar, stir well, and mix in the flour and spices.
    3. Press into a well-greased shallow baking tray, sprinkle with sesame seeds if desired, and bake in a moderate oven for about 30 minutes.
    4. Cut the shortbread into squares and cool in the tin.
    5. Store in an airtight container with a vanilla bean.

    Additional Tips

    More robust than a shortbread made with rolled pastry, this version is chunky and crumbly when bitten into. Try adding some chopped macadamias for a variation.
