A nice basic tea cake recipe with an apple and mixed spice topping. Perfect for a morning or afternoon tea.

Makes: 1 cake

  • 1 cup self raising flour
  • 1/2 cup caster sugar
  • 1 teaspoon butter
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 Granny Smith apple, peeled, cored and finely sliced
  • 2 teaspoons Herbie's Spices Mixed Spice

Preparation:15min  ›  Cook:30min  ›  Extra time:45min  ›  Ready in:1hour30min 

  1. Preheat the oven to 180 degrees C. Grease an approximate 20cm diameter cake tin.
  2. Sift flour and sugar into mixing bowl, rub in butter, then add egg and milk to make a fairly soft mixture. Add a little more milk if necessary.
  3. Pour the batter into the prepared cake tin then arrange the apple on top of the mixture.
  4. Combine the mixed spice with an extra teaspoon of sugar and sprinkle liberally over fruit.
  5. Bake for 30 minutes until cake has risen and top is browned.

Crunchy topping

To make an extra crunchy topping, mix a tablespoon of melted butter and 2 teaspoons each of caster sugar and mixed spice, and brush over the top of the cake just as it finishes cooking. Return to the oven for another 5 minutes.

Very quick, easy and delicios- but I doubled the ingredients to make a 20cm round cake, and also sprinkled walnuts on top with the apple slices. - 01 Feb 2013
