A nice basic tea cake recipe with an apple and mixed spice topping. Perfect for a morning or afternoon tea.
To make an extra crunchy topping, mix a tablespoon of melted butter and 2 teaspoons each of caster sugar and mixed spice, and brush over the top of the cake just as it finishes cooking. Return to the oven for another 5 minutes.

Very quick, easy and delicios- but I doubled the ingredients to make a 20cm round cake, and also sprinkled walnuts on top with the apple slices. - 01 Feb 2013
