An apple crumble recipe with extra zing in the crumble topping from ground coriander. This recipe was originally created by my mother, Rosemary Hemphill.

Serves: 6 

  • 6 peeled and sliced Granny Smith apples
  • 4 Herbie's Spices Cloves Whole
  • 2 teaspoons Herbie's Spices Cinnamon Quills Ground (or Herbie's Spices Cassia Bark Ground)
  • 1 cup (125g) plain flour
  • 1/2 cup raw sugar
  • 2 teaspoons Herbie's Spices Ground Coriander Seed
  • 125g butter or margarine

Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Place the flour, sugar and ground coriander seed into a bowl, mix to blend, then rub in the butter or margarine with your fingertips until the mixture is crumbly.
  2. Distribute the crumble evenly and lightly over the apples. Do not press it down.
  3. Layer the apple slices into a greased ovenproof dish and sprinkle with the cloves and cinnamon.
  4. Bake in a moderate oven for about 30 minutes or until golden brown on top. Serve with cream, ice-cream or custard.
