To make pancakes, beat milk and egg together then add the flour little by little until you have a smooth, thick batter.
Heat a flat pan, melt just enough butter to cover the base, and cook the pancake by placing two tablespoons of mixture in the middle of the heated pan and tilting the pan around until the batter has spread thinly.
After a minute, lift the edge to see if the pancake is browned. When it is, turn it with a spatula and cook the other side.
Melt a little more butter and make the next pancake the same way.
Transfer each cooked pancake to a plate and keep warm in the oven at 100 degrees C until they are all cooked.
Meanwhile make the sauce by warming all the sauce ingredients together in a saucepan until the butter and sugar have melted.
Add more sugar or lemon juice to taste and keep warm.
Mash the bananas with a fork with the mixed spice, lemon zest and 1 teaspoon lemon juice and set aside.
To assemble; place a pancake on each plate then spoon some banana onto each pancake and fold it over; pour some orange sauce over the top.
