Soft Banana Biscuits

    Ingredients
    Serves: 60 

    • 3 bananas, mashed
    • 185g butter or margarine
    • 1 egg
    • 1 cup (230g) white sugar
    • 1/4 cup (50g) packed brown sugar
    • 1 teaspoon bicarbonate of soda
    • 2 1/2 cups (310g) plain flour
    • 1/4 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1 1/2 cups (220g) rolled oats
    • 3/4 cup chopped walnuts
    • 1/2 cup sultanas

    Directions
    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C.
    2. Mix together in order given making sure that butter or margarine is well mixed in. You can add up to 1/2 teaspoon more of cinnamon if you like spice. More flour may be added if mixture is runny.
    3. Drop by tablespoonfuls on greased baking tray. Bake for 10 minutes or until edges are slightly brown. Biscuits will be soft.

    This recipe is quick, easy, and delicious. The biscuits (cookies) are super soft, even several days after I baked them. I didn't have sultanas, so I used regular black raisins. Otherwise, I followed the directions and got moist, chewy cookies that everyone in my family enjoyed.  -  11 May 2013

    I was wondering why no-one had posted a picture of this, and now I know why. It isn't the most attractive recipe. I think it would look better baked in a pan and cut into bars. Very tasty though.     My Husband and I both enjoyed these cookies and so did the men in his office. Many wanted the recipe for their own use. I did add a couple of things when I made them a little vanilla extract and a touch of salt, and a little more sugar. I did try icing a few with a cream cheese, brown sugar icing and that was wonderful too. They bake up very soft and yummy! Wonderful!  -  11 Jan 2001  (Review from Allrecipes USA and Canada)
