    This is a great example of a simple marinade that makes a big difference. This is my favourite BBQ chicken recipe with us eating it regularly over summer.

    Serves: 4 

    • 4 sprigs fresh rosemary
    • 2 lemons, freshly squeezed
    • 2 tablespoons olive oil
    • 1 pinch of salt, to taste
    • 4 skinless, boneless chicken breasts

    1. Lightly bash the rosemery to get the flavours flowing then combine in a bowl with the lemon juice, olive oil and salt.
    2. Add the chicken to the marinade and rest for at least 2 hours, turning regularly if possible.
    3. Preheat the barbecue for medium high heat, then lightly oil the grate.
    4. Remove the chicken from the marinade and disgard. Barbecue until the the centre is cooked and the juices are running clear.
