    This is a delicious and colourful recipe! It's very easy to make and has a nice sweet flavour.

    Ingredients
    Serves: 4 

    • 4 (185g) salmon steaks
    • 3 tablespoons olive oil
    • 1 large red onion, diced
    • 2 cloves garlic, peeled and crushed
    • 2 tomatoes, diced
    • 1 sprig fresh coriander, diced
    • 2 mangos - peeled, seeded and diced

    Directions
    Preparation:15min  ›  Cook:12min  ›  Ready in:27min 

    1. Preheat the oven grill. Line a grill tray with foil.
    2. Grill salmon steaks on the prepared tray 12 minutes or until easily flaked with a fork.
    3. Heat olive oil in a medium saucepan over medium heat and saute onion until tender. Stir in garlic, tomatoes and coriander.
    4. Cook until heated through; 1 to 2 minutes then remove from heat.
    5. Mix in the mangos. Serve over the salmon steaks.

    This recipe was easy and tasty but missing some zing, so I added 2 tbsp. lime juice, 1/2 diced red pepper, 1 jalapeno pepper - seeded and diced, salt and pepper to taste. It tasted wonderful over my grilled salmon. I have already made it twice, it is so fast to make.     Very very good. I served this at a get together for my mother's birthday. I used salmon filets instead of steaks, and baked them at 375, after lightly brazing them in a pan with salt, pepper, and olive oil. They were a hit! The salsa was incredible, and not too spicy for my 81 year old grandmother. Very colorful, and pleasing to the eye as well as the pallette. My family raved.
