An interesting take on the standard bruschetta, this version adds mango to the cheese and basil for a sweet kick.
Good bruschetta recipe, but I also added diced roma tomatoes, olive oil, crushed garlic and salt/pepper to taste. The mango/tomato taste is amazing. I've found, having made bruschetta many times, that lots of cheeses are good with it- for this I used fresh grated parmesan and it was great (but gruyere is the best). This was a hit at mother's. Even the picky eaters loved it! I got requests to make it again. It does not make much, however, so I will at least double it for 6 or more people since it was such a hit.
