Kiwi Fruit Salsa

    This is a different kind of salsa - a great combination of kiwi fruit, oranges, bananas, spring onion and vinegar. Great at the barbecue.

    Serves: 16 

    • 1 cup (250ml) balsamic vinegar
    • 1 spring onion, finely sliced
    • 1 banana, peeled and diced
    • 2 oranges, peeled, seeded and diced
    • 4 kiwi fruits, peeled and diced
    • 1 chilli, diced, to taste

    1. Heat 1/2 balsamic vinegar in a medium saucepan over medium high heat. Add onion and slowly cook stirring until soft.
    2. Stir in banana. Use remaining balsamic vinegar as needed to keep the mixture moist. Stir in oranges, kiwi fruits and chilli.
    3. Cook and stir until all ingredients are soft.

    I won't be making this again. Way too much balsamic vinegar and the combination with onions was too wierd for me. It definitely can't be eaten on its own.
