Flourless Blueberry Pancakes

I was looking for a hearty flourless pancake recipe that didn't require buying special ingredients and that tasted great. In all my searching I couldn't find one so I made up my own using oats. Enjoy!


Serves: 4 

  • 2 cups (170g) quick cooking oats (gluten free)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup (115g) honey
  • 4 egg whites
  • 1/4 cup (65ml) milk
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla essence
  • 1 cup fresh blueberries or frozen blueberries

  1. Combine oats, cinnamon, baking powder and salt in a bowl. Set aside. Mix honey, egg whites, milk, coconut oil and vanilla essence in a separate bowl. Stir the oat mixture into the egg mixture and mix well.
  2. Heat a lightly oiled frypan over medium-high heat. Drop batter by large spoonfuls onto the frypan and top with blueberries. Cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.
