Feta and Capsicum Chicken Salad

    Diced chicken breast mixed with light mayonnaise, fresh dill, diced red capsicum and feta cheese makes a delicious chicken salad that goes great on sandwiches or a bed of lettuce.

    Serves: 5 

    • 1/2 cup light mayonnaise
    • 2 tablespoons cider vinegar
    • 2 cloves garlic, crushed
    • 1/4 cup chopped fresh dill
    • 500g skinless, boneless chicken breast fillets, cooked and diced
    • 1 red capsicum, diced
    • 30g crumbled feta

    1. Combine mayonnaise, vinegar, garlic and dill. Refrigerate for several hours or overnight.
    2. Mix together chicken, capsicum and feta. Add chilled mayonnaise and mix well. Serve as a sandwich filling or over a bed of crisp green salad.
