    Although a vegan hot chocolate sounds easy enough it is hard to get a good flavour, this recipe delivers with a rich and chocolately flavour for all.

    Ingredients
    Serves: 2 

    • 2 1/2 cups soy milk
    • 3 tablespoons white sugar
    • 3 tablespoons cocoa powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla essence
    • 1 pinch ground cinnamon
    • 1 pinch cayenne pepper

    1. Bring the soy milk, sugar, cocoa powder, salt, vanilla essence, cinnamon and cayenne pepper to a simmer in a saucepan over medium-high heat. Remove from the heat and whisk until frothy. Serve immediately.

    I would try this again without the cinnamon- it tasted a little weird with it, and overpowered the chocolatey-ness. - 26 May 2010
