    This chocolate version of cream cheese icing is fantastic on vanilla cake or cupcakes. Its the perfect way to make a plain cake a special cake for birthdays, Easter or Mother's Day.

    Serves: 16 

    • 1 (250g) block cream cheese, softened
    • 65g butter, softened
    • 2 tablespoons milk
    • 1/2 cup (15g) shredded coconut
    • 1/4 cup (30g) cocoa powder
    • 1 1/2 cups (230g) icing sugar, or to taste

    1. In a medium bowl, mix together the cream cheese, butter and milk. Stir in coconut and cocoa powder, then gradually stir in the icing sugar until the desired sweetness is reached.

    Cupcake Tip

    If you want to be able to pack them easily for an event or kids' lunches, just drop a spoonful of icing into the unbaked cupcakes before you chuck them in the oven for a filled, no-mess cupcake.
