Rich Orange Cake

    This is a very moist and rich cake. You will love it!

    Serves: 10 

    • 125g butter
    • 3/4 cup (165g) white sugar
    • 2 tablespoons grated orange rind
    • 2 egg yolks
    • 1 cup (125g) self-raising flour
    • 1/2 cup (125ml) fresh orange juice
    • 2 egg whites
    • 1 pinch salt

    1. Preheat oven to 180 degrees C. Grease one 20cm round cake tin. Sift flour and set aside.
    2. Cream butter, sugar and grated orange rind until light and fluffy. Beat in the egg yolks one at a time. Fold in sifted flour, alternating with orange juice.
    3. In another bowl, whisk egg whites until stiff and add a pinch of salt. Fold whisked egg whites into the mixture. Spoon batter into prepared tin.
    4. Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into cake comes out clean.

    This is an excellent, easy recipe that yields a moist, delicious and wonderfully light cake. I used raw sugar because that's what I had on hand, and, once the cake had cooled, I added a glaze made with about 1/4 cup icing sugar, two tablespoons of orange juice and a tablespoon of lemon juice (I always tweak the quantities until I get the result I want though, so if you make it you may want to play with them too). It didn't make it past the weekend!  -  15 Oct 2015
