Peel potatoes and carrots dice onion, put the rice on to cook.
In a large saucepan add 1 tablespoon olive oil, let oil heat up then add onion, then add garlic, ginger and chilli flakes. Let them cook for about 1 minute then add diced chicken.
Let chicken cook half way through.
Add dark soy sauce until all chicken is covered, put saucepan lid back on and cook for a further 5 minutes on medium. Add the potatoes and carrots, stir together then add 2.5 cups of water and place lid back on.
Cook until potatoes and carrots are soft- about 45 minutes. Then serve with rice.
