    Ingredients
    Serves: 4 

    • 3 medium potatoes
    • 2 medium carrots
    • 1 teaspoon garlic & ginger
    • 1 large brown onion
    • 1 tablespoon olive oil
    • 500g diced chicken
    • 1/5 teaspoon chilli flakes
    • dark soy sauce as needed
    • 2.5 cups of water
    • 2 Cups SunRice medium grain rice
    • 2.5 cups water

    Directions
    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Peel potatoes and carrots dice onion, put the rice on to cook.
    2. In a large saucepan add 1 tablespoon olive oil, let oil heat up then add onion, then add garlic, ginger and chilli flakes. Let them cook for about 1 minute then add diced chicken. Let chicken cook half way through.
    3. Add dark soy sauce until all chicken is covered, put saucepan lid back on and cook for a further 5 minutes on medium. Add the potatoes and carrots, stir together then add 2.5 cups of water and place lid back on.
    4. Cook until potatoes and carrots are soft- about 45 minutes. Then serve with rice.
