Leone's Glazed Apple Cake

    Tangy apricot glazed apple cake recipe is topped with apples and spice. Delicious served with cream.

    Makes: 1 cake

    • Cake
    • 1 cup plain flour
    • 1 1/2 teaspoons baking powder
    • 3 tablespoons sugar
    • 60g butter or substitute
    • 1 egg, well beaten
    • 1/4 cup milk
    • pinch salt
    • Topping
    • 2 small green apples
    • 3 tablespoons sugar
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1 tablespoon melted butter
    • Glaze
    • 1/4 cup apricot jam
    • 1 tablespoon hot water

    1. Cake: Sift flour, baking powder and sugar into a basin. Rub butter in well, then stir in egg, milk and salt.
    2. Spread mixture into a well greased pie plate
    3. Topping: Peel and slice the apples then arrange in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. Melt butter and drizzle it over the sugar.
    4. Bake in a moderate oven for about 30 minutes. Keep an eye on it, it tends to cook fast.
    5. Glaze: Combine the apricot jam and hot water. Remove the cake from oven and pour glaze over it.

    This recipe was delicious! The cake is moist, and the apple/spice/apricot topping was perfect! I will definitely serve this again with a small change to the cake batter. The cake layer was a little bland, so next time, I will add a few dashes of vanilla and possibly a little extra cinnamon to the batter.  -  15 May 2013
