Leone's Glazed Apple Cake


Tangy apricot glazed apple cake is topped with apples and spice. Delicious served with cream.

Makes: 1 cake

  • 1 cup plain flour
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 60g butter or substitute
  • 1/4 cup milk
  • 1 egg, well beaten
  • pinch salt
  • 2 small green apples
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon melted butter
  • 1/4 cup apricot jam
  • 1 tablespoon hot water

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Sift flour, baking powder and sugar into a basin. Rub butter in well, then stir in beaten egg and milk. (I always add salt to egg. You can sift it into the flour if you like)
  2. Spread mixture into a well greased pie plate
  3. Topping: Peel and slice apples and arrange in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. (If you don't have nutmeg just cinnamon will do.)
  4. Melt butter and drizzle it over the sugar. Bake in a moderate oven for about 30 minutes. Keep an eye on it, it tends to cook fast. Remove from oven and pour glaze over it.

This recipe was delicious! The cake is moist, and the apple/spice/apricot topping was perfect! I will definitely serve this again with a small change to the cake batter. The cake layer was a little bland, so next time, I will add a few dashes of vanilla and possibly a little extra cinnamon to the batter. - 15 May 2013
