Cake: Sift flour, baking powder and sugar into a basin. Rub butter in well, then stir in egg, milk and salt.
Spread mixture into a well greased pie plate
Topping: Peel and slice the apples then arrange in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. Melt butter and drizzle it over the sugar.
Bake in a moderate oven for about 30 minutes. Keep an eye on it, it tends to cook fast.
Glaze: Combine the apricot jam and hot water. Remove the cake from oven and pour glaze over it.
This recipe was delicious! The cake is moist, and the apple/spice/apricot topping was perfect! I will definitely serve this again with a small change to the cake batter. The cake layer was a little bland, so next time, I will add a few dashes of vanilla and possibly a little extra cinnamon to the batter. - 15 May 2013
