Great one for the kids, full of hidden vegies and healthy stuff and the kids love the name!!!

Serves: 6 

  • 1 red capsicum
  • 1 medium size sweet potato
  • 2 cups baby spinach
  • 6 free range eggs
  • 2 cloves garlic
  • 1/2 cup milk
  • 1 cup grated cheese
  • 1 small onion

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Chop capsicum, onion & sweet potato into 2cm size pieces.
  2. Sautee sweet potato and onion in frypan with a small amount of olive oil,
  3. Mix all dry ingredients together in a quiche pan/ceramic dish
  4. Mix eggs, milk, cheese together and pour over the top,cook for 25-30 minutes in oven on 170 deg

Make it healthier

Add more veggies. Sometimes I'll grate some zucchini in or add potato as well, cut into finger size pieces for a party. Great cold too.
