The tart lemon dough and the sultanas make an interesting taste combination.

Makes: 48 Biscuits

  • 2 cups (250g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 250g butter
  • 2 eggs
  • 1 1/2 cups (330g) white sugar
  • 1/4 cup (65ml) lemon juice
  • 2 teaspoons lemon essence
  • 1 cup (85g) rolled oats
  • 1 cup (160g) sultanas

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat oven to 180 degrees C. Lightly grease 2 baking trays.
  2. In large bowl, cream butter, sugar, eggs, lemon juice and lemon essence. Mix until well blended. Blend in the flour, bicarb soda and salt. Stir in the oats and sultanas. Drop dough by spoonfuls 5cm apart on to baking trays.
  3. Bake for 12 to 15 minutes and transfer to racks to cool.

These are really nice, yummy my children have classified them. I only added 3/4 cup of sugar and they were sweet enough for us. - 11 May 2014
