Preheat oven to 180 degrees C. Lightly grease 2 baking trays.
In large bowl, cream butter, sugar, eggs, lemon juice and lemon essence. Mix until well blended. Blend in the flour, bicarb soda and salt. Stir in the oats and sultanas. Drop dough by spoonfuls 5cm apart on to baking trays.
Bake for 12 to 15 minutes and transfer to racks to cool.
