Jamaican Barbecued Chicken

    This is a Jamaican technique of cooking chicken after marinating it in "jerk" spices, which is to say ginger, chilli, orange, cloves, cinnamon and more.

    Serves: 3 

    • 1 spring onion, finely chopped
    • 4 tablespoons orange juice
    • 1 tablespoon finely grated fresh ginger
    • 1 tablespoon finely chopped green chilli
    • 1 tablespoon lime juice
    • 1 tablespoon soy sauce
    • 1 clove garlic, crushed
    • 1 teaspoon ground allspice
    • 1/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 whole chicken, cut into pieces

    1. Combine spring onions, orange juice, ginger, chilli, lime juice, soy sauce, garlic, allspice, cinnamon and cloves. Add chicken, and marinate for 8 hours.
    2. Preheat barbecue for medium heat. Cook chicken until juices run clear, and drizzle with leftover marinade that has been boiled for 2 to 3 minutes.

    Made this according to the recipe and it was nice, but next time I will use more ginger and chilli. I don't think 8 hours was long enough to marinade, next time I'll marinade overnight. Lovely flavours though.  -  02 Jan 2014

    This was awesome, I will definitely make it again. I mixed the marinade on Sunday and stuck it in the fridge, then Monday morning added it to the chicken, then come dinner time, it was quick and easy to throw it on the bbq.  -  02 Mar 2010
