Mum's recipe for success includes pouring white wine over the partially cooked chicken. I've used sherry in a pinch!


Serves: 4 

  • 1 (roughly 1kg) whole chicken, cut into pieces
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/2 cup (60g) grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1/2 cup (60g) dry breadcrumbs
  • 65g butter, melted
  • 1/2 cup (125ml) dry white wine

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Measure salt and pepper, garlic powder, paprika, thyme, Parmesan, parsley and breadcrumbs into a bag. Shake chicken pieces in bag until well coated.
  2. Oil baking tray lightly and arrange chicken in tray. Sprinkle with melted butter or margarine.
  3. Bake, uncovered, at 180 degrees C for 45 minutes. Remove from oven, and pour wine over all. Cover, and bake an additional 15 minutes.

Garlic Powder

Fresh garlic may be substituted for the garlic powder.

Good and easy. I used boneless chicken breasts so only cooked 30ish minutes before adding the wine...and didnt use the parsley in the cooking but kept it till serving. - 15 Apr 2010
