    Serves: 4

    • 4 skinless, boneless chicken breast halves - cut into thin strips
    • 1/2 onion, diced
    • 2 tablespoons crushed garlic
    • 1 teaspoon fresh ground black pepper
    • 1 pinch salt
    • 1 teaspoon flour
    • 1/4 cup fresh lime juice, or to taste
    • 4 1/2 cups baby spinach leaves

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min

    1. Place chicken, onions, garlic, salt, pepper and flour in a resealable bag or in a bowl. Stir in the lime juice. Allow to sit for a few minutes to marinate.
    2. Spray a non-stick frying pan with olive oil cooking spray and place over medium heat. Pour in the entire contents of the bag/bowl and cook until the onion has softened (there is no need to brown). Add additional lime juice to taste. Serve over spinach.

This recipe is a genuine, 100%, must have in your recipe file! My boyfriend was looking for a chicken recipe that featured lime flavours. WOW - did we find it. Absolutely fantastic served with a spinach salad featuring strawberries, mango, red onion, pecans and feta cheese. Great summertime meal.  -  22 May 2006  (Review from Allrecipes USA and Canada)

This was a great surprise. I was looking for a recipe to use up fresh spinach, and this turned out to be excellent. I served it with a side of pasta with ratatouilee, and together they made a very nice meal. Don't skimp on the lime juice, since you want the limey sauce from the chicken to flavor the spinach. Yum.  -  17 Aug 2010  (Review from Allrecipes USA and Canada)
