    Vegetable Soup with Garlic

    This is a great tasting soup, it is essentially a vegetable and pasta soup but then you add the garlic at the end to give it a strong garlicky flavour.

    Serves: 6 

    • 2 tablespoons olive oil
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 1/4 medium head cabbage, finely sliced
    • 6 cups (1 1/2 litres) chicken stock
    • 2 (400g) tins diced tomatoes
    • 3 1/2 cups (875ml) water
    • 1 cup (150g) macaroni
    • 3 cloves garlic, diced
    • 1/2 teaspoon ground black pepper

    1. Heat the oil in a large saucepan over medium heat. Sauté the carrots, celery and cabbage in the oil for about 8 minutes; stirring well.
    2. Raise heat to high then pour in the stock, tomatoes and water. Bring to a boil, reduce heat to low then cover and simmer for 1 hour.
    3. Remove lid stir in macaroni and heat for 5 minutes or until macaroni is tender. Remove from heat then stir in the garlic and ground black pepper.
