    All the dried fruit ingredients in this fruit cake are boiled before cooking which makes it extra plump and moist. It is even better the next day.

    Ingredients
    Makes: 1 cake

    • 225ml water
    • 900g dried mixed fruit
    • 225g caster sugar
    • 170g butter
    • 230g plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon mixed spice
    • 2 eggs, beaten

    1. Preheat the oven to 150 degrees C. Grease a 23x12cm loaf tin and line with greaseproof paper.
    2. Combine the water, dried fruit, sugar and butter in a saucepan over medium heat.
    3. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes.
    4. Sift the flour, bicarb soda and mixed spice into a large bowl. Pour in the boiled mixture and stir until well blended. Mix in the eggs.
    5. Pour into the greased loaf tin.
    6. Bake for 90 minutes in the preheated oven until a skewer or knife inserted into the top comes out clean.
    7. Cool cake in the pan for at least 10 minutes before removing.
