Garlic Cheese Spread

    This is a very strong-flavoured cheese spread! Cut the flavourful logs into rounds and serve with round water crackers.

    Serves: 32 

    • 500g sharp cheddar cheese, grated
    • 250g cream cheese, softened
    • 1 cup (125g) diced pecans
    • 2 tablespoons mayonnaise
    • 2 tablespoons lemon juice
    • 2 cloves garlic, diced
    • 1/2 teaspoon paprika

    Preparation:10min  ›  Extra time:2hours chilling  ›  Ready in:2hours10min 

    1. In a medium bowl mix the cheddar cheese, cream cheese, pecans, mayonnaise, lemon juice and garlic. Form into 2 or 3 logs. Sprinkle each log with paprika. Chill the logs until firm; about 2 hours.
    2. Slice each log into rounds as needed and serve with crackers.

    This is a keeper! I only had mild cheddar so I tried half a batch and it was great. Next time I will definitely go buy some extra sharp cheddar. I used my food processor to mix and toasted my pecans first. We also didnt wait for it to chill, I just scooped it into a bowl and served as a spread.
