Melt the butter in a saucepan over low heat and cook the garlic until tender; about 5 minutes.
In a shallow bowl mix the bread crumbs, Parmesan cheese, cheddar cheese, parsley, oregano, pepper and salt.
Dip each chicken breast in the garlic butter to coat then press into the bread crumb mixture. Arrange the coated chicken breasts in a 20 x 36 cm baking tray. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
Bake 30 minutes in the preheated oven or until chicken is no longer pink and juices run clear.
Made this tonight and it was beautiful! I'm a novice when it comes to cooking but this super easy to make and the results were restaurant quality! I served it with greek salad and curly fries. Only change I made was I dipped the chicken in egg before the garlic butter to make it stick. My family were very impressed but they suggested that maybe this could use a kind of sauce or relish on the side, any ideas? - 09 Apr 2011
