Coconut Slice

    A chewy and sweet treat. Great for the school lunch-box.

    Serves: 9 

    • 1 cup (125g) plain flour
    • 1 cup (90g) desiccated coconut
    • 1 cup (185) diced dates
    • 1/2 cup (125g) white sugar
    • 1 teaspoon baking powder
    • 60g butter
    • 1 tablespoon golden syrup
    • 1 teaspoon vanilla essence
    • 2 tablespoons (10g) desiccated coconut

    Preparation:20min  ›  Cook:30min  ›  Extra time:1hour cooling  ›  Ready in:1hour50min 

    1. Preheat oven to 165 degrees C. Grease and flour a 22cm square tray.
    2. In a large bowl combine flour, 1 cup coconut, dates, sugar and baking powder. In a saucepan melt butter, golden syrup and vanilla. Pour over mixture in bowl. Mix until crumbly then press into prepared tray.
    3. Bake in preheated oven for 20 to 30 minutes. Sprinkle top with remaining coconut.

    This is a great slice. Very tasty and easy and can be adapted to almost any other ingredients instead of the dates. I cut mine while still quite warm so that it doesn't crumble. Just delicious.  -  16 Aug 2010


    Not sure if I did something wrong, but the end result was pretty crumbly and difficult to cut. Tasted nice enough though.  -  08 Aug 2010


    Tasted very good, but I found that the butter and molasses (subst. for golden syrup) just weren't enough moisture to bind the dry ingredients together at all. I added a beaten egg and it turned out very nicely.  -  26 Apr 2003  (Review from Allrecipes USA and Canada)
