Curried beef

    Serves: 4 

    • 500gm diced lean beef washed well under running water & drained
    • 1/3 cup vegetable oil/olive oil
    • 3 red/green fresh chillies, seeded, crushed or finely chopped
    • 3-6 dry red chillies or 1/2 tspn dry chilli powder
    • 3 cloves garlic crushed or finely chopped
    • 1 large onion finely chopped
    • 1 tblspn curry powder
    • 1 teaspoon turmeric
    • 1 teaspoon salt
    • 2 bay leaves
    • 1/2 tspn of each mustard seeds,cinnamon, cloves,ginger, basil, black pepper, ground cayenne, cumin & coriander
    • 2 tablespoons tomato paste
    • 1 tablespoon lemon juice
    • 1 cup beef, vegetable stock or plain water
    • 1/2 tsp vinegar preferably white & naturally brewed

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Heat oil in large pot not a pan, add cubed meat & saute until golden brown 4-5 mins on med heat.
    2. Add onions, chillies, garlic, curry powder, turmeric, spices & mustard seeds. Stir in 2-3 mins till an aroma develops.
    3. In a bowl mix together tomato paste, sugar, lemon juice & stock. Then pour half the mixture over the meat gently & cook on med-high stirring constantly until almost dry. Reduce heat & pour over balance of mixture & mix thoroughly. If too thick add a little water.
    4. Cover with lid & let simmer for 1/2 hour. Stir occasionally.

    Serving suggestion

    Can be served with vegetables or rice
