Real men don't eat quiche

    It's basically a quiche without pastry so I could convince my Dad to eat it cos it's a PIE! Delicious. Warm, cold, reheated. I use low fat ingredients and it's just as good

    Serves: 4 

    • 1/3 cup plain flour
    • 1.5 cups skim milk
    • 3 eggs
    • 1 cup grated low fat cheese
    • 1 can (130g) corn kernels
    • 3 FATLESS bacon rashers
    • pepper to taste
    • spinach - quantity depends on fresh or frozen
    • parsley or chives

    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Grease a flan or quiche dish
    2. Blend flour with milk in a bowl. Add eggs and beat very well. Stir in any remaining ingredients.
    3. Pour into dish and sprinkle with extra pepper.
    4. Cook in Moderately slow oven at 160 degrees for about an hour.


    Chopped Roma or cherry tomatoes... yum, either in the mix or add just before pepper. Onions, boiled sweet potato, whatever!


    NEVER consider this ingredient list a definite! Add and subtract!

    very handy recipe, thanks! Let's face it, pastry is nice but has little to recommend it nutrition-wise, plus this easy quiche is so versatile- we had it with mushrooms and chopped bacon, sauted in a pan before adding, and sliced tomato on top.  -  12 May 2012
