Sweat the Onion and Garlic in 1tbs Olive Oil until the Onion is soft
Break up the mince into small pieces and add to the saucepan, Stir the Mince until almost completely brown
Add the Shiraz (with stove on high for 1 minute)
Add the canned Tomatoes and Mushrooms
Add the Tomato Paste (add the ½ cup of water to the tomato paste jar, place the lid on and shake it up, pour the liquid into the pan)
Add the Mushrooms and Capsicum
Add the Salt, Pepper and Spices
Stir through thoroughly, then simmer for 25 minutes.
Cook Spaghetti (or any other pasta of your choice as directed)
Add some Parmesan Cheese once you have plated the Spaghetti and Bolognaise Sauce if desired
Serve with a glass of the Shiraz you used to cook the sauce
You can add more CHilli if you like it more spicy but this is meant to be mild as the wine is the real player here.
375g seems like a lot of Tomato Paste but.., Trust me. This is the richest most decadent Bolognaise you will have tried.
Seriously.., Use a good - very good Shiraz no younger that 2yrs old. This is not a cheap meal if you use the right wine but it will impress anyone who tries it.., Guaranteed
