A tasty meat and pasta soup which is tomato flavoured.

Serves: 8 

  • 2 carrots
  • 2 onion
  • 2 sticks celery+ leaves
  • 3-4 potatoes
  • 100ml extra virgin olive oil
  • 2 large tablspoons tomato paste (or more if you like)
  • 1 oxo cube
  • 1 + 1/2 cups risoni ( or small pasta stars)
  • 1 teaspoon salt/pepper to taste
  • 750 grams lean rump/topside lean chuck steak

Preparation:20min  ›  Cook:2hours  ›  Extra time:8hours resting  ›  Ready in:10hours20min 

  1. Add up to 4 litres water in pot + /- depending on your family.
  2. Peel and cut up the carrot,onion, celery - small dice and add to pot. peel and quarter the potatoes and add to the pot
  3. Cut the meat to approx. 50 ml. pieces (cubed) and add to pot
  4. Add the olive oil, tomato paste and the oxo cube and cook on slow simmer for 2 hours or until vegies are soft
  5. add salt and pepper to taste
  6. If all the vegies are soft,add the risoni and leave until next day (if you can wait) the pasta should be now soft
  7. Serve with some crusty bread and enjoy.
