Penne and Olives

    Serves: 4 

    • 1 cup Penne
    • 2 tablespoons Olive oil
    • 1 clove Garlic
    • 1/2 cup Cherry tomatoes
    • 1 tablespoon Black olives
    • 1 tablespoon basil pesto

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Cook the penne in salted boiling water. While it is cooking heat the olive oil and garlic in a pan, on low heat. Halve the tomatoes; halve and pit the olives (or buy pitted olives).
    2. When the penne is soft (or 'al dente' as the Italians say) strain it and add to the oil. Add tomatoes, Pesto, and olives. Stir to combine and warm through. You can add some pine nuts if you like.
    3. Serve in bowls, add a little grated parmesan cheese if desired.

    Really like this dish. However, I don't eat huge amounts and I almost polished the lot off for dinner so if there was two of me I'd probably add another couple of handfuls of pasta and double the tomatoes. If you are sticking to the portions prescribed, I'd only use one tablespoon of olive oil as the pesto adds even more. Really nice and simple AND very tasty.
