Full of flavor, delicious pasta dinner

Serves: 4 

  • 1 cup Penne
  • 2 tablespoons Olive oil
  • 1 clove Garlic
  • 1/2 cup Cherry tomatoes
  • 1 tablespoon Black olives
  • 1 tablespoon basil pesto

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Cook the penne in salted boiling water. While it is cooking heat the olive oil and garlic in a pan, on low heat. Halve the tomatoes; halve and pit the olives (or buy pitted olives).
  2. When the penne is soft (or 'al dente' as the Italians say) strain it and add to the oil. Add tomatoes, Pesto, and olives. Stir to combine and warm through. You can add some pine nuts if you like.
  3. Serve in bowls, add a little grated parmesan cheese if desired.
